1. Tell us about your blog “A Couple Cooks” and the inspiration behind it?
A Couple Cooks was born in 2010. My husband Alex and I had gotten married a few years earlier, and wanted to learn how to cook something for dinner guests at our new home. We started trying recipes, and ended up falling in love with cooking. A bit later, we read the book Food Matters by Mark Bittman, which challenged us to stop eating processed foods and start focusing on vegetables instead of meat. We loved the way we felt, and this started a new passion for personal health and the environmental effects of our food choices.
All of these passions, along with our shared passion for photography, led to a lot of meals and food photos. We had a personal blog at the time where we posted pictures of the food we were creating, and after about a year of that we decided to separate it into a dedicated food blog. We had no idea where A Couple Cooks would go, and it’s been an amazing ride learning about recipe development and food photography, and meeting inspiring artists and activists from around the world
2. What is your philosophy when it comes to healthy eating?
There are so many diets out there, which can be incredibly confusing! Alex and I have done a lot of reading and have come up with what seems to be common in most diets: healthy, whole foods, with a focus on plants. And even better? Cooking these foods at home! Once you start incorporating them into your diet, you’ll come to appreciate how delicious eating whole foods can be.
We eat a “Mediterranean-style” diet – olive oil, lots of vegetables and whole grains, and minimal sweets and meats. We aim for 90% vegetarian meals, and 90% healthy whole foods, since we find a relaxed approach to eating makes it doable. “Everything in moderation” is a common theme for us.
3. On a busy day what do you usually whip up for lunch and dinner?
On a busy weeknight, we don’t always have time to cook a new recipe. If not, we’ll have a big salad, quesadilla, or a quick stir fry — if we don’t have any leftovers in the refrigerator! Leftovers are our favorite; we try to plan to have enough from our weekend cooking sessions that we can eat during the week.
4. What are some of your favorite meals? Can you share a few links to these recipes?

Loaded Sweet Potato Skins and a salad
Homemade pizza, like White Pizza with Pecorino, Scallions and Egg
5. Do you have any advice for moms who would like to get healthy meals on the table everyday but find it difficult due to their busy schedule?
Plan, plan, plan! We’ve found anything is possible with some advanced planning, but meals aren’t just going to show up on the table (as much as we’d like them to!). Figure out a few interesting meal ideas for the week and do prep work on the weekend, or as much in advance as possible. Also don’t worry about having a few “no fuss” meals in between prepared meals, like an egg sandwich or quesadillas and a salad. And make sure to use those leftovers!
6. Where do you look for inspiration for your recipes?
Everywhere: online, what’s seasonal at the farmer’s market, other food blogs, cookbooks, magazines — even going out to dinner and trying to make a copycat recipe!
7. What is the most unusual combination of ingredients that you’ve used in a recipe?
One unusual combination is raw brownies; instead of the traditional baked good, it’s a no-bake recipe that combines Medjool dates, walnuts, and cocoa powder. It sounds odd, but it results in a gooey, dark chocolate-y brownie that tastes almost as good as the real thing (to us, at least).
8. If you had a “last supper” what would it be?
Anything with truffles. Maybe a white pizza with truffles? And then flourless dark chocolate cake with raspberries (As a second option, I’d eat that Roasted Nourish Bowl – I’m kind of obsessed.)
9. What do you do to exercise/stay fit?
We have an elliptical machine, so I run on that every weekday morning. I have a FitBit so I make sure to walk / run at least 10,000 steps every day! I also do Pilates on DVD, and yoga once per week.
10. What are some of your favorite blogs that appeal to you as a foodie?
We have so many favorite blogs it is hard to mention just a few! Cookie + Kate, Love and Lemons, Sprouted Kitchen, The First Mess, and Edible Perspective are all favorites.
